Yummy spinach lasagna made with homemade vegetarian tomato sauce.

Recipe Ingredients for Spinach lasagna w/olive and mushroom sauce

10 oz lasagna noodles
16 oz tomato sauce
12 oz tomato paste
1/4 cup olive oil
8 oz mozzarella cheese
10 oz reduced fat mozzarella cheese
8 oz mushrooms
4 oz olives
16 oz frozen spinach
15 oz ricotta cheese
2 oz romano cheese
1 onion
2 eggs

Recipe Directions for Spinach lasagna w/olive and mushroom sauce

  1. saute onion and mushroom with spices as desired. add tomato paste and sauce and can of water. Add olives. Bring to boil and simmer for 1 hr. Reserve.

  2. Mix cheeses, reserving 1/2 cup mozzarella.

  3. Layer sauce, noodles, cheese mix, spinach. Repeat. Then add more sauce and top w/ reserved mozzarella.

  4. Bate 40 min at 375.
