versatile recipe--use it as a dip or add more water, cheese, milk, cream, or half and half to make it more like a pesto for veggies, pasta and rice

Recipe Ingredients for Spinach hummus/pesto

3/4 c chickpeas
1/4 c great northern beans
1 T extra virgin olive oil
1/4 cup spinach, frozen, thawed
4 cloves garlic
1 T dried onion
1/2 c water
1 tsp salt
1/2 tsp pepper

Recipe Directions for Spinach hummus/pesto

  1. reconstitute onions in 1 T warm water, or grate fresh onion to equal 1 T

  2. blend beans, onions, garlic (minced) and spinach with 1/4 C water until pureed.

  3. stream in oil.

  4. salt and pepper to taste

  5. **add cheese and milk/cream/half-and-half for a creamy pesto sauce; or add more oil; or add more water. Try lemon juice for a more summer-y light taste. I didn't have basil when I made this, but it would be even better with fresh basil or any other herb you'd like.
