Recipe Ingredients for Spinach & Ground Turkey Enchiladas

1 lb ground turkey
1 small onion, chopped
9 oz frozen spinach
3/4 cup frozen corn
4 1/2 oz old el paso green chiles, chopped
1/2 tsp ground cumin
1/4 tsp pepper
1 tbspn garlic, minced
1/2 cup fat free sour cream
2 cups shredded monterey jack cheese
10 oz Old El Paso Sauce Enchilada Mild
9 whole wheat tortillas
1/2 cup salsa

Recipe Directions for Spinach & Ground Turkey Enchiladas

  1. heat oven to 350

  2. cook beef & onion over med heat, until brown

  3. stir in spinach & corn, cook, stirring frequently until thawed. Stir in chiles, cumin, garlic, pepper, sour cream, & 1 cup of the cheese.

  4. spread 1 tspn enchilada sauce on each tortilla, top each wiht 1/2 cup of beef mix, roll and place in baking dish.

  5. In a small bowl mix remaining ench. sauce and salsa, spread on top of ench enchilada, top with cheese.

  6. Bake for 40 to 45 min (should cover with foil, but it's not req.)
