Spinach and goat cheese stuffed sweet potatoes

Recipe Ingredients for Spinach and goat cheese stuffed sweet potatoes

1 Sweetpotato
1/2 small red onion
1 c. spinach, frozen
2 tsp. olive oil
2 tbsp garlic, minced
2 oz. goat cheese
1/2 tsp. cinnamon
1 tsp. nutmeg
1 tsp black pepper
1/4 tsp. sea salt

Recipe Directions for Spinach and goat cheese stuffed sweet potatoes

  1. Bake sweet potato whole in oven or microwave until fully cooked.

  2. Sautee onion, garlic, and spinach in 1 tsp olive oil.

  3. Cut potato in half lengthwise. Scoop out insides, leaving 1/4" of potato to form a shell.

  4. In a bowl, mash together the reserved insides of potato with remaining tsp of olive oil. Mix with goat cheese and vegetable mixture. Season with salt, pepper, nutmeg, and cinnamon as desired.

  5. Stuff the mixture into the potato skin shells. Bake in oven at 400 degrees until warm and bubbly.
