Recipe Ingredients for Spinach and Fruit Salad

1/2 lb. Spinach
3 ea Oranges
1 Ea Red Onion
1/2 Cp. Raspberries or sliced strawberries
3 Tbl. Fresh Orange Juice
1 Tbl. Cider vinegar
6 Oz Vegetable Oil
1/2 tsp salt
1/8 tsp black pepper

Recipe Directions for Spinach and Fruit Salad

  1. Trim stems from Spinach, wash well and spin dry.

  2. Grate 1 Tbl zest from one orange. Juice one orange, and Skin and trimmed the white pith off of 2 oranges and slice into round slices.

  3. Whisk together orange juice, vinegar and vegetable oil. Season to taste with salt and pepper, and grated orange zest..

  4. Toss spinach in dressing arrange on 4 plates.

  5. Arrange sliced oranges and onions on top.
