Recipe Ingredients for spinach fritters

3 lb potatoes
1 lb spinach
1 egg
1 egg yolk
1/2 cp parmesan cheese
5 oz fontina cheese
2 cups bread crumbs

Recipe Directions for spinach fritters

  1. Cook potatoes - 25 min. Drain, and mash.

  2. Cook spiach in boiling water - 8-10 min. Drain, cool. Squeeze out excess moisture and chop.

  3. Combine with potatoes and mix well.

  4. Put eggs in a large bowl with salt, pepper, potatoes, spinach, and parmesan. Blend with a fork.

  5. Place TBSP of miture in hand. Press a cube of cheese in the center and close mixture around it to make a croquette. Roll in bread crumbs.

  6. Bake ntil done.
