My favorite Italian breakfast, made with the three colors of Italy--green, orange-red and white.

Recipe Ingredients for Spinach Frittata

3 eggs
2 cups spinach
1/4 cup onion, chopped
1/4 cup skim milk
2 tbsp water
1/2 tsp kosher salt
1/4 tsp black pepper
4 oz Asiago cheese
1/2 cup tomato, chopped
1 tbsp butter
1 tbsp oil

Recipe Directions for Spinach Frittata

  1. Preheat the oven to Broil. Beat eggs with a whisk with milk, salt, pepper and water. Set an 8" heavy-bottomed skillet over medium-high heat and add oil and butter. The trick to a perfect frittata is to get the pan very hot to ensure the eggs are nice and fluffy.

  2. Cook onions until lightly caramelized, then add the tomato and spinach. Stir while cooking over semi-high heat--spinach will wilt and reduce VERY quickly. Add in beaten egg mixture and saute until just set. Top with Asiago cheese.

  3. Place skillet in the oven for 1-3 minutes, or until frittata has cooked on top/cheese has turned golden-brown. The process will not take very long at all. Quarter and serve.
