Eggs and veggies, fine for breakfast but also good for dinner. Could probably be slimmed down a little by using less or lower-fat cheese.

Recipe Ingredients for Spinach Frittata

1 cup (156g) potatoes, hashed-brown, home prepared
1/4 cup (40g) chopped onions
2 4/5 g garlic, minced
95 g cooked chopped spinach
2 large eggs (122g)
1 oz (28g) shredded cheese

Recipe Directions for Spinach Frittata

  1. Saute onions, garlic, potatoes.

  2. Add spinach, stir to combine, continue cooking. Season to taste.

  3. Add eggs, beaten with about 1 tbsp. water.

  4. Lower heat and cover pan; cook until eggs are set.

  5. Add cheese on top to melt.
