Recipe Ingredients for spinach frittata

8 eggs
3 tbsp. olive oil
1/2 c. 1% milk
4 c. spinach (raw)
1 onion (diced)
1/2 c. shredded cheddar (lowfat)

Recipe Directions for spinach frittata

  1. beat eggs and milk together

  2. heat one tbsp of olive oil over medium heat

  3. add onions, saute 1 minu

  4. add 2nd tbsp olive oil

  5. add spinach slowly, stirring, as spinach wilts

  6. add final tbsp olive oil, lower heat to low

  7. slowly pour in egg mixture, stirring constantly

  8. continue stirring slowly and steadily until egg mixture is nearly set

  9. transfer to a casseroule dish that has been sprayed with Pam

  10. sprinkle cheese on top

  11. broil for about 4 minutes or until cheese melts and egg mixture is set
