A great brunch item for two. Just double the ingredients if you need more.

Recipe Ingredients for Spinach Frittata

1 tablespoon Olive Oil
1 small onion, sliced
2 cloves garlic, minced
10 oz. frozen spinach, thawed
2 large eggs
3 egg whites
1/3 cup fat free evaporated milk or skim milk
1/2 cup part-skim mozzarella cheese, shredded

Recipe Directions for Spinach Frittata

  1. Preheat oven to 350 degrees.

  2. Heat oil in a 1p" nonstick skillet over medium heat.

  3. Add onion and garlic and clook for about 3 minutes until tender.

  4. Sitr in spinach, after draining well. Reduce heat to low.

  5. Beat eggs and eggwhites with milk until light yellow and frothy.

  6. Pour over spinach in skillet.

  7. cook 5-7 minutes until cooked on bottom and almost set on top.

  8. Sprinkle with cheese.

  9. Bake in oven until eggs are set and cheese melted. (about 5-10 minutes)
