Recipe Ingredients for spinach frittata

2 whole eggs
3 egg whites
2 cups baby spinach
3 tbsp green onion
2 oz shitake mushrooms
3 tbsp asparagus

Recipe Directions for spinach frittata

  1. Sautee mushrooms, onions, asparagus and spinach until soft.

  2. Meanwhile, beat egg whites and whole eggs together, add salt, pepper and garlic powder to taste.

  3. Pour over veggie mixture, cook until bottom is set.

  4. Place in oven under broiler until firm and fluffy.
