Recipe Ingredients for Spinach Fritata

4 eggs, large
2 egg whites
1 cup fresh baby spinach, cut up
1/2 cup sliced mushrooms
1 cup fresh asparagus, steamed
1/2 cup fat-free cheddar cheese

Recipe Directions for Spinach Fritata

Preheat oven to 400 degrees. In a 12 inch skillet, spray well with non-stick cooking spray. Cook mushrooms. Add steamed asparagus. In separate bowl, combine eggs and eggwhites, beat well. Add to mushrooms and asparagus. Add spinach. Cook for about five minutes until eggs are semi set. Add cheese to the top and finish cooking in the oven for about an additional five minutes.
