These is a grab and go breakfast recipe you can make ahead of time.

Recipe Ingredients for Spinach/flax Egg Muffins

1/2 cup water
1/8 cup sugar
1/2 tablespoon yeast
12 tablespoons flaxseed meal
1/2 tablespoon oil
12 eggs
12 egg whites
3 cups spinach
1 1/2 cups reduced fat mozzarella cheese

Recipe Directions for Spinach/flax Egg Muffins

  1. Combine first 5 ingredients.

  2. Let rest and spoon a tablespoon of mixture in the bottom of large miffin tine.

  3. Combine the last 4 ingredients and pour over top of the other mixture.

  4. Bake at 350 for 25 minutes.
