Recipe Ingredients for spinach filled meatloaf


meatloaf:
1 3/4 pounds ground beef
3/4 cups oatmeal
1 egg
1 tsp salt
1 tsp pepper
1 tbsp ketchup

filling:
20 ounces frozen chopped spinach
1/2 cup mozzarella cheese
3 tbsp parmesan cheese
2 tsp italian seasoning
1/2 tsp salt
1/4 tsp garlic powder

topping:
3 tbsp ketchup
1/4 cup mozzarella cheese
1 tsp dried italian seasoning

Recipe Directions for spinach filled meatloaf

  1. heat oven to 350 degrees

  2. in a medium bowl combine filling ingredients

  3. in a large bowl mix meatloaf ingredients lightly but thoroughly

  4. place beef mixture on waxed paper and pat into a 14X10 inch rectangle. spread the filling over the beef leaving a 3/4 inch border around the edges.

  5. starting at the short end roll up jelly-roll fashion. press beef mixture over spinach filling at both ends to seal. place seam side down on rack in roasting pan.

  6. bake for 1 hour at 250 degrees. spread ketchup over loaf and continue baking for 15 minutes.

  7. remove from oven and top the loaf off with 1/4 cup of cheese and additional seasoning.
