Spinach Fettuccini with Yogurt Cream Sauce

Recipe Ingredients for Spinach Fettuccini with Yogurt Cream Sauce

8 ounces spinach fettuccine
1 teaspoon olive oil
1 medium zuchinni, thinly sliced
1 medium yellow squash, thinly sliced
1 small red bell pepper, cored, seeded and sliced
2 cloves garlic, thinly sliced
1/4 cup low sodium chicken broth
4 ounces Greek yogurt
1/4 cup fresh basil, chopped
2 tablespoons parmesan cheese
1 tablespoon half and half
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Recipe Directions for Spinach Fettuccini with Yogurt Cream Sauce

Cook pasta as directed on package. Drain and set aside. Heat skillet with olive oil over high heat. Add squashes, bell pepper and garlic. Reduce to low heat; cook until pepper begins to soften, 2-3 minutes. Add broth; cook until all vegetables are tender, 3-4 minutes. Remove from heat; add pasta, yogurt, basil, cheese, cream and salt and pepper. Toss and serve immediately.
