Recipe Ingredients for Spinach Fettuccine with Scallops

12 oz. spinach fettuccine
1 lb. bay scallops
2 tbsp. olive oil
5 cloves garlic, minced
2 1/2 cups diced tomatoes
1/2 cup chopped fresh parsley

Recipe Directions for Spinach Fettuccine with Scallops

  1. Cook fettuccine according to package directions.

  2. In the meantime, heat oil in a skillet over medium-high heat. Add scallops and saute about 2 minutes per side.

  3. Add garlic and saute briefly before adding tomatoes.

  4. When tomatoes are heated, add parsley.

  5. Drain pasta and serve with sauce.
