Low cal polenta recipe with vegetables and tuna.

Recipe Ingredients for Spinach Feta Tuna Polenta

2 cups cornmeal
1 pound frozen spinach
8 cloves garlic
250 grams feta cheese
2 tablespoons olive oil
2 cans tuna
6 cups water
2 cups tomato soup

Recipe Directions for Spinach Feta Tuna Polenta

  1. Saute all non liquid ingredients in olive oil, except for cheese.

  2. Add broth and water and bring to a boil.

  3. Pour in polenta and cook for 2-5 minutes until smooth.

  4. Remove from heat, crumble feta and mix into polenta.

  5. Cool until you can form it into cakes with your hands, then grill, without additional oil, in a pan.
