A savoury muffin - great for breakfast on the go - good protein level.

Recipe Ingredients for Spinach, Feta & Sundried tomato muffins

2 eggs
1/4 cup olive oil
1/2 cup reduced fat yogurt
1 1/2 cups self raising flour
100 g reduced fat feta cheese
100 g lean bacon
1 onion
2 cloves garlic
2 cups baby spinach
12 dried tomatos

Recipe Directions for Spinach, Feta & Sundried tomato muffins

  1. Pre heat oven to 200 degrees celsius

  2. Whisk eggs, oil and yoghurt.

  3. Add remaining ingredients (note its sun dried tomatos). Bacon is a cured meat and therefore doesn't need to be cooked before adding to this recipe (you'd be double cooking it!). Baby spinach is to be sliced thin - raw don't cook it.

  4. Spoon into muffin pan

  5. Bake 15 minutes at 180 degrees celsius or until lightly golden.

  6. Makes 12.
