Recipe Ingredients for Spinach and Feta Stuffed Chicken Breasts

3 breast, bone and skin removed Chicken, Breast, Meat Only
6 oz Baby Spinach
1 cup, crumbled Feta Cheese
1 serving Cooking Spray All Varieties

Recipe Directions for Spinach and Feta Stuffed Chicken Breasts

  1. Cook the spinach in a nonstick frying pan until it is bright green and wilted.

  2. Let it cool a bit on paper towels while you butterfly and pound the chicken breasts to 1/4" thickness.

  3. Squeeze some water out of the spinach and mix crumbled feta with it.

  4. Portion the spinach mix onto the chicken, roll the chicken up and get it to stay rolled with toothpicks.

  5. Fry in olive oil for 5 minutes on each side, or until golden brown then bake on baking sheet until chicken is done.
