Spinach and feta cheese stuffed breaded chicken. Good with corn oysters.

Recipe Ingredients for Spinach feta stuffed chicken breasts

16 oz chicken breasts
3 cups spinach
2 tablespoon Olive Oil
2 cloves Garlic
4 oz feta cheese
6 oz panko bread crumbs
2 eggs
1/4 cup milk
1/2 cup peanut oil
2 tablespoons butter
1 cup mushrooms
1 cup chicken broth
1 cup white wine
1/2 cup lemon juice

Recipe Directions for Spinach feta stuffed chicken breasts

  1. Saute minced garlic in olive oil, add spinach and wilt.

  2. Pound breast - fill each breast with 1/2 spinach mix, top with feta cheese. Wrap meat around filling and secure with toothpicks.

  3. Dredge chicken in egg, coat with bread crumbs, fry in peanut oil 2 minutes each side.

  4. Place chicken in pan and bake 30 minutes at 350

  5. Meanwhile, melt butter in skillet, add mushrooms. When tender add 1 tablespoon flour. Then add broth, wine & lemon juice. Cook until thick. Serve hot
