Recipe Ingredients for spinach, feta and roasted tomato omellette

2 egg whites
1 egg
1/2 cup frozen spinach
1 tomato
1 oz feta cheese
1 tbsp olive oil

Recipe Directions for spinach, feta and roasted tomato omellette

  1. wrap a tomato with foil and put in oven or toaster oven at 350 for at 1-1 1/4 hr

  2. thaw the frozen spinach and strain all liquid

  3. beat egg and egg whites(or just do egg whites) and add to oild non-stick pan

  4. when egg if somewhat firm all rest of ingredients
