Amazing salad, with a lovely combination of colors and flavors.

Recipe Ingredients for Spinach, Feta, and Red Beet Salad

11 ounces baby spinach, raw
16 ounces beets
1/4 cup feta
1/4 cup Walnuts, English
1/2 orange
3 tbsp sesame oil
5 tbsp white wine vinegar
1 tsp dijon mustard

Recipe Directions for Spinach, Feta, and Red Beet Salad

  1. Cover beets with tin foil, and roast in oven until cooked thru.

  2. When beets are finished cooking, remove from the oven and allow them to cool for about an hour. Then peel and dice.

  3. Combine Vinegar, juice from half an orange, and dijon mustard. Whisk. Then slowly whisk in the oil.

  4. Place spinach on a plate, top with beets, drizzle with dressing, and add walnuts and feta cheese.

  5. Enjoy
