Spinach-Feta Quiche Recipe

Perfect for a weekend brunch or a quick week day breakfast when made ahead. It reheats nicely either in the microwave, oven or toaster oven. Served with fresh fruit, its a beautiful and easy breakfast.

Recipe Ingredients for Spinach-Feta Quiche

8 Pilsbury Pet Ritz Deep Dish Pie Crust (1 shell, partially baked
10 ounce frozen chopped spinach, drained and squeezed dry
8 ounce sliced mushrooms, finely chopped
1/2 cup onion, chopped
2 cloves garlic, minced
1/2 cup Reduced Fat Feta Cheese
2 Eggs
3/4 cup egg substitute
2 ounces fat free cream cheese, softened
1/3 cup fat free sour cream
1/4 cup fat free milk
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Spinach-Feta Quiche

  1. Preheat oven to 350 degrees.

  2. Pre-bake pie crust for 5-7 minutes. Set aside.

  3. Drain spinach, squeezing between paper towels.

  4. Saute mushrooms, onions and garlic until all moisture is cooked out.

  5. Put into large mixing bowl and set aside to cool. Add in drained spinach and feta cheese

  6. In a separate bowl, mix softened cream cheese and sour cream until there are no lumps. Wisk in milk, eggs, egg substitute and salt & pepper.

  7. Add egg mixture to spinach mixture and pour into pie shell.

  8. Bake at 350 for approx. 45 minutes until done.

  9. May need to protect edges with foil to prevent burning depending on your oven.
