Quesadillas made with spinach and feta cheese. Even my kids like these!

Recipe Ingredients for Spinach and Feta Quesadillas

8 oz neufchatel cheese or low fat cream cheese
1/4 tsp garlic powder
1/4 tsp pepper
8 flour tortillas
9 oz frozen spinach, thawed and drained
1 red bell pepper, finely chopped
4 oz crumbled feta cheese

Recipe Directions for Spinach and Feta Quesadillas

  1. In a small bowl, combine neufchatel cheese (or cream cheese), garlic powder, and pepper. Blend well. Spread 2 tablespoons on each tortilla.

  2. Sprinkle 2 tablespoons each of spinach, feta cheese, and bell pepper on half of each tortilla. Fold tortillas in half.

  3. Heat large nonstick skillet over medium-high heat until hot. Place 2 folded tortillas in skillet; cook about 2 minutes on each side or until golden brown.

  4. Remove quesadillas from skillet and place on a plate; cover with foil to keep warm. Cut into 4 wedges. Serve warm.
