Recipe Ingredients for Spinach Feta Pocket Pies

3 cup Whole Wheat Pastry Flour
8 ounces Low Fat Cream Cheese
1 cup Butter
1/2 cup nonfat milk
1/2 teaspoon salt
2 1/2 cup Frozen Spinach
1 tablespoon extra virgin olive oil
1 large onion
1 egg
1 1/2 cup feta cheese
1 tablespoon dried dill

Recipe Directions for Spinach Feta Pocket Pies

  1. Place salt, cream cheese, butter, milk and flour in a food processor to blend into dough. Separate into two chunks and wrap in plastic. Refrigerate.

  2. Meanwhile, saute onion until translucent and add garlic. Cook for 30 seconds and add spinach. Allow to cool slightly before adding dill and feta. Season to taste with salt and pepper. Add 1 beaten egg to help things hold together.

  3. Roll out dough and cut into circles (i use a small bowl as a template), aiming for 20 portions.

  4. Brush the edges in a half moon shape with egg wash (to help things seal) and place a dollop of the spinach mixture on each portion.

  5. Fold over and seal with a fork. Poke several holes in the top of the pies and either bake (brush a little more egg over the top of the pie to help with browning and bake at 350 until done) or freeze (individually wrap in plastic wrap and place in a zip top bag.
