baked egg, spinach and feta cheese (13 x 9 pan)

Recipe Ingredients for spinach and feta fritatta

20 eggs
10 oz. spinach
1 cup feta cheese
10 oz. mushrooms
1/2 cup sundried tomatoes
1/2 cup kalamata olives
6 slices french bread

Recipe Directions for spinach and feta fritatta

  1. cube french bread and spread one layer of cubes in bottom of 13 x 9 inch glass pan (sprayed with Pam)

  2. layer spinach, mushrooms, feta, olives and sundried tomatoes over bread

  3. beat eggs and pour over layered ingredients

  4. cover with foil and bake 45 minutes at 350 degrees

  5. uncover and bake another 15 minutes
