This makes enough filling for 4 Calzoni, each cut into 5 pieces. I like to make several kinds of calzoni when I make Calzoni Dough for a Crowd (recipe elsewhere), so this only fills 1/4 of the calzoni.

Recipe Ingredients for Spinach and Feta Filling for Calzoni

10 1/2 oz spinach, fresh, washed, dried, and chopped coarsely
4 tbsp garlic, minced
2 tsp olive oil
1/4 c fresh basil, chopped
1 3/5 oz feta cheese, crumbled (1/5 of an 8 oz pkg)
1/2 tbsp parmesan cheese, shredded

Recipe Directions for Spinach and Feta Filling for Calzoni

  1. Saute garlic in olive oil. Add spinach and saute until just wilted. Remove from heat and add basil. The heat from the pan is enough. Stir it in well. Allow to cool somewhat.

  2. Sprinkle feta crumbles down the center of prepared calzoni dough. Top with spinach mixture. Sprinkle parmesan over all.

  3. Fold to enclose and bake according to Calzoni Dough for a Crowd recipe.
