Used feta and blue cheese because it is what I had.

Recipe Ingredients for Spinach/Feta Cheese Quiche

10 pkg. frozen chopped spinach
4 eggs
3/4 cup fat-free half and half
1 1/4 cup skim milk
2 tbsp lemon juice
2 tsp dried parsley
1/8 lb feta cheese
1/8 lb blue cheese
1 pie crust
3 tbsp grated Parmesan

Recipe Directions for Spinach/Feta Cheese Quiche

  1. Drain spinach and squeeze out as much moisture as possible; it should be fairly dry. Mix the eggs, cream, and milk. Add the salt, pepper, lemon juice, and parsley. Stir in spinach and feta cheese. Fill crust and place the grated cheese on tope.

  2. Bake at 375 degrees for 30 to 40 minutes or until a knife inserted in center comes out dry. Cool for 10 minutes before serving. Can also be served at room temperature.
