Recipe Ingredients for Spinach Feta Casserole

2 lb fresh spinach
1 cup feta cheese
1 egg
2 egg whites
1/2 cup onion, chopped
1 tbsp olive oil

Recipe Directions for Spinach Feta Casserole

Preheat oven to 350 degF. Steam the spinach. Drain the spinach and press out any extra water. Saute onion in olive oil until onion is soft and clear. Mix spinach, onion, feta, egg and egg whites in a large bowl. Spray casserole dish with non-stick cooking spray. Spoon mixture into prepared casserole dish. Bake for 30 minutes. Let set for 10 minutes before serving.
