Recipe Ingredients for Spinach Enchiladas

2 cup Plain Low Fat Yogurt
2 cup (not packed) Cottage Cheese, Lowfat, 2% Milkfat
10 oz Spinach
12 oz Fresh Boneless Skinless Chicken Breasts
1.25 cup Sauce, La Victoria, La Victoria Enchilada Sauce
1/4 cup chopped Scallions
6 tortilla Smart

Recipe Directions for Spinach Enchiladas

Saute diced onion in large pan lightly coated with cooking spray over medium high heat until onions become translucent. Add diced jalapeno peppers and spinach. Cook for 4-5 minutes more until spinach is thoroughly wilted. Set aside. Boil the chicken in salted water or broth for 3-4 minutes. Set aside to cool, then tear into shreds. In a food processor, combine cottage cheese and yogurt. Blend until smooth and creamy. Add 1 teaspoon of chili powder, cumin and oregano to add flavor. Then mix in the chicken and spinach mixture. Divide evenly among 6 tortillas, roll and place in a 9x12 baking dish. Cover with enchilada sauce. Bake at 375 degrees for 35-45 minutes, or until hot and bubbly. Let sit for10 minutes before serving.
