Omelet with green peppers, onions, spinach and mozzarella cheese.

Recipe Ingredients for Spinach, egg and cheese omelet.

2 whole eggs
1/8 cup chopped green peppers
2 tablespoons chopped onion
2 teaspoons olive oil
1/2 ounce mozzarella cheese
1/2 cup raw spinach

Recipe Directions for Spinach, egg and cheese omelet.

  1. In skillet, saute onion and green pepper in olive oil.

  2. Add spinach til wilted.

  3. Cover with beaten eggs and cheese.

  4. Cook until set.

  5. Can flip and cook to brown.
