Spinach & Egg Bake Recipe

Easy to make egg dish for any mealtime.

Recipe Ingredients for Spinach & Egg Bake

3 large eggs
4 egg whites
2 oz organic baby spinach (coursely chopped)
1 oz portabella mushrooms (large caps yields 4 slices)
1 oz red bell pepper (cut in strips)
1/8 cup shallots (finely chopped)
2 tblsp 1% low fat milk
1 clove garlic (very crushed)
1 tblsp fresh basil (finely chopped)

Recipe Directions for Spinach & Egg Bake

  1. Set oven to 350 degrees.

  2. Beat 6 large eggs & add all ingredients EXCEPT mushrooms and red peppers.

  3. Spray a 9x9 square baking dish (glass if you have one) with non-stick spray (I use Pam Olive Oil spray).

  4. Pour mixture into pan then layer with sliced mushrooms caps and red peppers.

  5. Loosely cover with foil and bake for about 20-25 minutes.

  6. Cut into qtrs, then cut qtrs again in half to make 8 servings.

  7. *Optional: Salt & pepper or other dried flavorings.

  8. *Variation: Use 8-9 egg whites or egg substitute.
