Easy lunch that's light on the stomach and protein rich.

Recipe Ingredients for Spinach Egg Bake

3 large eggs
3 oz chopped mushrooms
5 1/2 cups spinach
3 oz grilled steak, chopped finely
1 1/2 oz feta cheese, finely crumbled [1019&size=2]
1 tsp olive oil

Recipe Directions for Spinach Egg Bake

  1. Preheat oven to 450.

  2. Heat 1/2 tsp olive oil in pan on medium, add chopped mushrooms. Rinse spinach and cut into inch-wide pieces. Add to pan. Remove pan from heat as soon as spinach is lightly wilted. Lay spinach and mushroom mixture at bottom of 7' x 7' pan, then sprinkle half of feta over. Beat eggs together in a small bowl. Sprinkle steak over, then pour egg mixture over. Sprinkle remaining feta over, then lightly press everything down to make sure that it is covered by egg mixture.

  3. Bake in oven for 20-25 minutes. Remove once feta on top starts to brown, and eggs are thoroughly cooked.
