Nice appetizer to serve hot. Can also be used as a sandwich spread.

Recipe Ingredients for Spinach Dip

4 cups chopped fresh spinach
3 tablespoons olive oil
2 teaspoons garlic
3 tablespoons flour
2 cups whole milk
1 cup shredded Parmesan cheese
3 tablespoons white wine
1 tablespoon hot sauce (optional)

Recipe Directions for Spinach Dip

  1. Place the fresh spinach in a large glass bowl. Use scissors to chop it. Place in a microwave and cook for 2 minutes, stir, and cook another 2 minutes. Leave it covered to steam while the rest of the dip is made.

  2. Place olive oil in large frying pan. Add the garlic and saute until garlic is soft. Stir in the flour until smooth. Stir in the milk, white wine, and hot sauce, and stir until smooth and flour is cooked. Add the parmesan cheese, and stir until smooth. Add the spinach, and cook until flavors are blended. Place in a small, dip sized crockpot. Serve with blue tortilla chips, or a crusty baguette.
