Spinach and Potato Curry -African Style

Recipe Ingredients for Spinach Curry

1 medium (2-1/2" dia) Onions
246 grams Tomatoes, Red, Ripe
6 tbsp Oil Olive Extra Virgin
50 grams Cilantro
1 g Garam Masala Powder
1 serving dhania jeera
1 tsp Salt
8 cup Spinach
2 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled

Recipe Directions for Spinach Curry

  1. In a large pan heat olive oil to medium and add chopped onions.

  2. Let the onions cook till translucent and add the tomatoes chopped and quatered potatoes.

  3. Let the mixture cook till it becomes a thick sauce.

  4. Add spices like dhana jeero and garam masala and salt and pepper. You can add paprika for an extra kick.

  5. Once the tomato sauce thickens and the flavors infuse add the chopped spinach.

  6. Reduce heat to low and let the mixture cook uncovered, stirring occasionally.

  7. Let the sinach cook for a good 20 minutes, check on the potatoes.

  8. Let simmer for 5 more minutes and then serve with brown rice or roti.
