Recipe Ingredients for Spinach, Creamed

2 pounds spinach, washed and tough stems removed
2 tablespoons canola butter
1/2 cup shallots, finely chopped
1 teaspoon garlic, minced
1/2 teaspoon black pepper, freshly ground
1/4 teaspoon nutmeg
1/2 cup half and half
1 wedge cream cheese, The Laughing Cow Garlic and Herb

Recipe Directions for Spinach, Creamed

  1. Bring a pot of salted water to a boil over high heat.

  2. Add the spinach and cook for 2 minutes.

  3. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible.

  4. Finely chop and set aside.

  5. Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes.

  6. Add the spinach and cook, stirring, just until the liquid is released.

  7. Add the cream, salt, pepper, and nutmeg, and cook until the cream is reduced by half, about 4 minutes.

  8. Remove from the heat and serve immediately.
