Recipe Ingredients for Spinach and chickpea curry

108 grams Onion
50 grams Green Pepper
120 grams Tinned Tomatoes
150 grams Chickpeas
125 grams Spinach
10 grams Olive Oil
1/2 teaspoon tumeric
1/2 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon chilli
1 teaspoon curry powder

Recipe Directions for Spinach and chickpea curry

  1. Place onion green pepper and oil in a pan and sweat until soft do not brown

  2. Add spices and curry Powder simmer for a few minutes stirring to ensure spices are evenly distributed

  3. Add canned chopped tomatoes and cook until liquid has reduced by half

  4. Add chickpeas and heat through

  5. When ready to serve add spinach leaves stir through to wilt leaves and serve
