Recipe Ingredients for Spinach Chicken Parmesan

2/3 cup grated Parmesan Cheese
1 tsp. Italian Seasoning
1/2 tsp. salt
24 oz. chicken breasts (6 chicken breasts)
1 large onion, chopped
2 cloves garlic, minced
2 tablespoons butter
2 tablespoons all purpose flour
1 cup 2% milk
10 oz frozen spinach
1/2 tsp cayenne pepper

Recipe Directions for Spinach Chicken Parmesan

  1. Preheat oven to 350 degrees

  2. In a small bowl combine cheese, Italian Seasoning, and salt. Pound chicken to 1/2 inch thickness or less, then roll in mixture to coat. Place in 8x8x2 baking dish.

  3. In a medium saucepan, saute onion and garlic in butter until tender. Stir in flour, then add milk all at once. Simmer, stirring, until bubbly. Stir in drained spinach and cayenne.

  4. Spoon mixture on top of chicken, sprinkle with any remaining cheese mixture and bake uncovered 30 to 35 minutes.
