Parmesan-coated chicken smothered in spinach...

Recipe Ingredients for Spinach Chicken Parmesan

1/3 cup grated parmesan cheese
1/4 tsp basil
1 1/2 lbs boneless skinless chicken breasts
1/4 cup chopped onion
1 tbsp butter
1 1/2 tbsp flour
3/4 cup lowfat milk
10 oz frozen chopped spinach, thawed and drained
1 tbsp crushed red pepper

Recipe Directions for Spinach Chicken Parmesan

  1. Preheat oven to 350 degrees

  2. Combine cheese and seasoning. Roll chicken pieces in mixture to coat lightly.

  3. Set remaining cheese mixture aside.

  4. Arrange coated chicken pieces in 8x8 coated baking dish.

  5. In a small saucepan, saute onion in butter until tender.

  6. Stir in flour, then add milk all at once. Simmer, stirring often, until bubbly.

  7. Stir in drained spinach and red pepper and mix.

  8. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Bake uncovered for 30 to 35 minutes or until tender and juices run clear.
