Incredibly delicious - and a perfect use for that left over bacon fat from breakfast. Use as a filling for whole wheat tortillas, or alone.

Recipe Ingredients for Spinach and Chicken Burrito Filling

1 bunch spinach
1 1/2 oz bacon fat
250 g tomato
2 cloves garlic
1 red onion
180 g chicken breast
4 tbs Cooking Wine

Recipe Directions for Spinach and Chicken Burrito Filling

  1. Heat the bacon fat in a large skillet on med-high.

  2. Chop the onion and add to the pan. After about 2 minutes, add the garlic.

  3. Add the pre-washed spinach, unchopped. I use adult spinach but baby spinach works as well.

  4. When the spinach begins to wilt, add the coursely chopped tomato (about 2 medium).

  5. After the tomato softens add sherry and some salt or tamari to taste, let simmer.

  6. Take pre-cooked (preferably broiled) chicken breast and cut into chunks or strips, then add to the pan, allowing it to warm and soak in the juices.

  7. When the chicken is cooked through, turn off the heat and serve in a warm tortilla, or alone in a bowl. Add a scoop of Total Fage 0% as garnish.
