Recipe Ingredients for Spinach, chicken, and black bean enchiladas

8 cups (1 lb) fresh spinach leaves, stemmed
15 oz black beans, drained and rinsed
1/2 cup salsa
1/4 tsp ground cumin
1/4 tsp chili powder
6 flour tortillas
1/2 cup low-fat sour cream
2 teaspoons lime juice
4 oz low-fat shredded cheese
2 Italian plum tomatoes, diced
2 green onions, thinly sliced
1 1/2 cups cooked chicken breast, shredded

Recipe Directions for Spinach, chicken, and black bean enchiladas

  1. Before starting: cook and shred chicken and rinse canned beans (or soak dried beans overnight, then cook about an hour).

  2. In a large pot, bring water to boil over high heat.

  3. While water heats, thoroughly rinse spinach. Add spinach to boiling water and cook for 1 minute. Remove with a slotted spoon and drain well in a colander, pressing out as much liquid as possible with back of spoon.

  4. Preheat oven to 350. Spray casserole dish with vegetable oil and set aside.

  5. In a large bowl, combine spinach, black beans, chicken, salsa, cumin, and chili powder.

  6. Spoon 1/6 of the mixture down the middle of one tortilla. Roll the tortilla around the filling and place seam-side down in casserole dish. Repeat with remaining tortillas.

  7. Bake enchiladas, uncovered, for 15 minutes.

  8. Meanwhile, combine sour cream and lime juice. Remove enchiladas from oven and spread sour cream mixture over them. Top with cheese, tomatoes, and green onions and bake for 5 minutes.
