Recipe Ingredients for Spinach Chick-Pea Soup

1 tbsp Olive Oil
4 cloves garlic
2 onions
1 potato
4 cups vegetable broth
2 tsp coriander
2 tsp parsley
1 tsp marjoram
540 ml chickpeas
20 oz spinach

Recipe Directions for Spinach Chick-Pea Soup

Lightly saute garlic and onions in oil. Add potato, cook stirring 1 minute. Add broth, parsley, coriander and marjoram. Cover and cook for 15 minutes until potato is tender Stir in chick peas. Using a hand mixer or food processor, puree until chick peas are just coarse. Return to pan. Add Chopped spinach and simmer for 5 minutes. Add water if too thick.
