20 Jumbo Pasta shells stuffed with spinach and cheese

Recipe Ingredients for Spinach & Cheese Stuffed Shells

9 ounces pasta Jumbo Shells-approx 20
1 teaspoons extra-virgin olive oil
2 onions, finely chopped
1 tablespoon garlic, minced
10 ounce frozen chopped spinach
2 cups part-skim or low fat ricotta cheese
1/4 cup freshly grated Parmesan cheese
1/4 teaspoon ground nutmeg
1 Freshly ground pepper to taste
1 egg white large, lightly beaten
3 cups marinara sauce
14 1/2 ounce Tomatoes, Diced
2 cups finely shredded Mozzarella cheese, Part-Skim low-moisture

Recipe Directions for Spinach & Cheese Stuffed Shells

  1. Preheat oven to 375F. Spread 1 cup marinara sauce in the bottom of a 9-by-13-inch baking dish.

  2. Cook shells in a large pot of boiling water, stirring often, until just tender, about 15 minutes or according to package directions. Drain and rinse under cold water. Set aside.

  3. Heat oil in a large nonstick skillet over medium-high heat. Add onions and cook, stirring occasionally, until softened, about 3 minutes. Add garlic. Add thawed Spinach, to the onions and toss to mix well. Set aside.

  4. Combine ricotta, Parmesan and nutmeg in a bowl; mix well. Add spinach mixture and season with salt and pepper to taste. Stir in egg white.

  5. Stuff each of the reserved shells with a generous 2 tablespoons of the ricotta mixture. Arrange stuffed shells in a single layer. Top with diced tomatoes and remaining 2 cups of the sauce, sprinkle with Mozzarella cheese over top.

  6. Bake until the top is golden and the shells are heated through, about 30 minutes. (If the top browns too quickly, tent loosely with foil.) Let cool for 10 minutes before serving.
