Modified from food.com. Added onions and mushrooms, doubled garlic, halved breadcrumbs and changed butter to olive oil. I mix the breadcrumbs with Italian Seasoning, ground black pepper and a pinch of salt but you can use anything you want.

Recipe Ingredients for Spinach and Cheese Stuffed Chicken Breasts

4 unit+yield+from+1+lb+ready-to-cook+chicken chicken breasts
2 tablespoon garlic, minced
1 small onion, minced
1 tablespoons olive oil
16 ounce spinach leaves
1/4 cup mushrooms, chopped
1/2 cup cheese, diced
1 teaspoon ground black pepper
1 cups breadcrumbs, seasoned
1 tablespoons olive oil

Recipe Directions for Spinach and Cheese Stuffed Chicken Breasts

  1. Preheat oven to 350 F (177 C)

  2. Prepare chicken for stuffing.(You can either, slice 2 thick chicken breasts in half and make 4, or pound 4 chicken breast until thin and wide.).

  3. Saute garlic and onion in oil until aromatic.

  4. Add spinach and mushrooms and saute until spinach has wilted.

  5. Add in cheese and mix until cheese has slightly melted.

  6. Distribute spinach mixture onto each chicken breast.

  7. Wrap chicken around mixture (kinda like a taco) and secure with a toothpick.

  8. Roll each breast in bread crumbs until well coated.

  9. Place in an oiled baking dish and pour the olive oil over them.

  10. Bake for 30 minutes.

  11. Carefully cut each piece diagonally in half and serve.
