Recipe Ingredients for Spinach & Cheese Puff - Modified

5 sprays cooking spray, butter flavor, for baking dish
30 ounces frozen chopped spinach, thawed and squeezed dry
1 1/2 cups fat free half-and-half
2 large eggs, lightly beaten
1/4 cup egg substitute
6 ounces Gruyere cheese, corsely grated (1 1/2 cups)
1 dash salt, corsely ground
1 dash black pepper, corsely ground
1/4 teaspoon ground nutmeg

Recipe Directions for Spinach & Cheese Puff - Modified

  1. Preheat oven to 350 degrees. Butter a shallow 1-quart baking dish.

  2. In a large bowl, combine spinach, half-and-half, eggs, egg substitute, 1 cup Gruyere, 2 teaspoons salt, 1/8 teaspoon pepper, and nutmeg; stir to combine. Spread evenly in prepared baking dish, and top with remaining 1/2 cup Gruyere.

  3. Bake until set and top is golden brown, 30 to 35 minutes.
