Recipe Ingredients for Spinach and Cheese Phyllo Squares

60 grams phyllo dough (6 sheets)
10 ounces frozen chopped spinach
2 1/2 cups shredded part-skim mozzarella cheese
1 1/2 cups shredded reduced-fat cheddar cheese
1 1/2 cups fat-free cottage cheese
1 3/4 cup egg substitute
1 1/2 teaspoons dried parsley flakes
3/4 teaspoon salt
3 egg whites
1 1/2 cups fat-free milk

Recipe Directions for Spinach and Cheese Phyllo Squares

  1. Layer three phyllo sheets in a 13? x 9? x 2? baking dish coated with nonstick cooking spray, lightly spraying the top of each sheet with nonstick cooking spray.

  2. In a bowl, combine the spinach, cheeses, 1/2 cup egg substitute, parsley flakes and salt; spread over phyllo dough.

  3. Top with remaining phyllo sheets, lightly spraying the top of each sheet with non-stick cooking spray.

  4. Using a sharp knife, cut into 12 squares.

  5. Cover and chill for 1 hour.

  6. Beat egg whites, milk and remaining egg substitute. Pour over casserole.

  7. Cover and refrigerate overnight.

  8. Remove from the refrigerator 1 hour before baking.

  9. Bake, uncovered at 375 for 40-50 minutes or until a knife inserted near the center comes out clean and top is golden brown. Let stand 10 minutes before serving.
