Variation on spanikopita. Using pizza dough instead of philo and using a Pampered chef technique of "braiding" the dough around the filling.

Recipe Ingredients for Spinach and Cheese Braid

3 cups bread flour
1/4 ounce active dry yeast
1 1/4 cups warm water
2 tablespoons extra virgin olive oil
3 tablespoons chopped fresh rosemary
1 teaspoon olive oil
1 small onion, chopped
1 garlic clove, minced
3 cups fresh spinach, chopped
1 cup low-fat ricotta cheese
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 egg, separated
1/2 cup crumbled feta cheese

Recipe Directions for Spinach and Cheese Braid

  1. Preheat the oven to 375 degrees. For the filling. Heat the oil in a large skillet and cook the onion over medium low heat, stirring until softened, about 5 minutes. Stir in the garlic and cook about 1 minute. Stir in the spinach and cook, stirring until the spinach is wilted, about 2 minutes. Transfer the vegetables to a mixing bowl and stir in the ricotta, nutmeg, salt, and cayenne. THen stir in the egg yolk and feta until blended. Set aside ( can be made ahead but you need to return to room temperature to use.)

  2. For the dough mix the flour and dry yeast in a bowl. make a well in the middle of the flour and pour in the warm water and olive oil. Once it forms a stick ball, transfer onto a well floured cutting board. kneed until elastic, adding rosemary and enough flour to make workable. roll out onto a baking sheet sprayed with nonstick spray (preferably with flour) into a large rectangle. Take a pizza wheel and cut slices into the dough along both long edges about 3 inches long and 1 inch apart making the same number of slices on either side and lining them up.

  3. Put the filling in the long rectangle in the middle of the dough. not getting too close to the short edges. Start at one end by picking up the first slice on either side and twist before laying one tip over the other and pressing lightly with your fingers to seal. Continue to the end. Bring the short ends up and press together with the frist slices to keep the filling from oozing out. Take the egg white and brush all over the dough. Bake for 25 to 30 minutes. Serve with marinara sauce if desired.
