Great tasting breakfast finger-food -- terrific for people "on-the-go"! Spinach and cheddar quiche, with a "lite" twist. Still VERY tasty, but with less than 55 calories each!

Recipe Ingredients for Spinach and Cheddar Triangles Lite

3 large eggs
3/4 cup egg substitute
3/4 cup skim milk
3/4 tsp Italian seasonings
3/4 tsp garlic powder
1/2 tsp onion powder
1/4 tsp crushed red pepper
1/8 tsp dill
1 tbl chives
10 oz frozen spinach, thawed, drained & squeezed dry
1/4 cup bread crumbs, Italian
105 g (1 1/4 cups) reduced fat shredded cheddar cheese , divided

Recipe Directions for Spinach and Cheddar Triangles Lite

  1. Preheat oven to 350-degrees F. Mix eggs, egg substitute, milk, spices, and cup cheese in medium bowl; mix until well-blended. Add spinach, stir until completely blended.

  2. Coat a 9 X 9 inch baking pan with cooking spray; sprinkle bread crumbs evenly over the bottom of pan. Sprinkle evenly with 3/4 cup of cheese. Pour egg mixture evenly over cheese. Bake 25 minutes. Sprinkle with remaining 1/2 cup cheese. Bake 5 minutes longer or until toothpick inserted in center comes out clean.

  3. Let stand 10 minutes before serving. Cut into 16 triangles.

  4. TIP: to cut into triangles, cut 4 equal squares, then cut diagonally creating an "X" in each square. Continue cutting diagonally until 16 triangles are formed. TO USE AS AN APPETIZER, cut into 32 triangles
