Recipe Ingredients for Spinach Cheddar Pepper Quiche

3 eggs, whisked
1 tbsp. fat free cottage cheese
1/2 tsp. salt
1/2 tsp. black pepper
2 tbsp. cheddar, shredded
5 cups spinach, chopped
1/4 cup yellow onion, diced
1/4 cup red peppers, diced

Recipe Directions for Spinach Cheddar Pepper Quiche

  1. Whisk two medium eggs and add to egg substitute. Whisk until bubbles form.

  2. Whisk in fat-free sour cream, salt & pepper.

  3. Mix cheddar into egg mixture.

  4. In seperate bowl, toss spinach, onion and bell pepper together.

  5. Fold into egg mixture, coating evenly.

  6. Pour into 8x8 baking pan.

  7. Bake at 350 for 25-30 minutes, or until center is set.
