Spinach and Cheddar Baked Omelet Recipe

This is a great recipe to make and freeze individual servings that can be microwaved and added to an english muffin and canadian bacon for a quick breakfast to go. Add a little dijon mustard for even more flavor and almost no calories!

Recipe Ingredients for Spinach and Cheddar Baked Omelet

1 cup skim milk
1/3 cup flour
2 cups eggbeaters
1 tbsp dijon mustard
1/2 tsp salt
1/4 tsp pepper
10 oz chopped frozen spinach (thawed and squeezed dry)
6 ounces cabot 50% light cheddar cheese, shredded

Recipe Directions for Spinach and Cheddar Baked Omelet

  1. Preheat oven to 350 degrees.

  2. Spray a 10 x 15 inch rimmed cookie sheet with cooking spray (Pam). Line cookie sheet with parchment paper (let edges stick up over rim of sheet and spray again)

  3. In a large bowl, whisk milk and flour together.

  4. Add eggbeaters, mustard, salt and pepper and whisk til combined.

  5. Pour in to prepared cookie sheet and sprinkle evenly with spinach.

  6. Bake until edges are set, about 10 - 12 minutes. Sprinkle evenly with cheddar cheese and bake an additional 2-4 minutes or until cheese has melted and omelet is set.

  7. Remove from oven and let cool 1-2 minutes. Using parchment paper roll up, jelly roll fashion, as tightly as possible, reserve paper and cookie sheet. Let cool 10-15 minutes to set. Slice with a sharp knife into 16 pinwheels and place back on used parchment paper/cookie sheet to freeze (I find it easiest to cut in half, then in half again until I have the 16 slices). Remove from freezer and place in a ziplock bag. When needed, remove one pinwheel and microwave 1 to 1 1/2 minutes and enjoy.
